Hello!  Welcome to Darth Vegan.  My name is CC.  I’m an American living and working abroad.  I have a teeny tiny kitchen, but I do my best to create delicious meals and treats.  Being vegan in Asia offers all kinds of new advantages and disadvantages. I’m very fortunate to live close to a local market, full of delicious fruits and vegetables.  But this also means that I don’t often have access to exotic western luxuries… like earth balance and raspberries. As much as I love eating local food, after a few months I started missing some staples, like bread, so I learned to make my own.  After some practice, and a big dose of encouragement, I decided to start this blog to share my recipes with you!  I think vegan food can and should be just as delicious as “regular” food, and strive to achieve this in all of my recipes.  I also really like Star Wars…if you couldn’t tell.  Thanks for stopping by!

Stumbled across your blog via Pinterest – it was the cheezy kale bagels that drew me in, but the blog name had me hooked ;) We’re a sci-fi nerd house :) I’m new to the vegan way of life, slowly edging my way in, starting with the diet. I began a fully plant-based diet this month and am really enjoying the amazing food! Whoever said vegetarian and vegan diets were boring have ABSOLUTELY NO IDEA what they’re talking about!!

    Best of luck to you and your ventures – I too really missed bread and other western foods while we were in Thailand (and we were only there for two weeks!). Cute pic btw ;)
